Ingredients

- 2 cups shredded cheddar cheese
- 1 cup diced cooked ham
- 1 cup Greek yogurt
- 2 large eggs
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup chopped spinach
- 1/2 cup finely diced bell pepper
- 1/4 cup sliced green onions
Instructions
- Preheat oven to 400°F and lightly grease a muffin tin or baking sheet.
- Whisk flour, baking powder, salt, and pepper in a bowl.
- Stir in cheddar, ham, spinach, bell pepper, and green onions until coated.
- Mix in Greek yogurt and beaten eggs to form a thick, sticky biscuit dough.
- Scoop 12 equal mounds into the muffin tin or onto the sheet.
- Bake 22–25 minutes until puffed, golden, and set in the center.
- Cool slightly before serving or freeze for meal prep.
Notes
- For a spicier version, add diced jalapeños.
- These biscuits can be frozen for up to 3 months.
- Serve with a side of fresh fruit for a complete breakfast.
