Ingredients

  • 2 cups shredded cheddar cheese
  • 1 cup diced cooked ham
  • 1 cup Greek yogurt
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup chopped spinach
  • 1/2 cup finely diced bell pepper
  • 1/4 cup sliced green onions

Instructions

  1. Preheat oven to 400°F and lightly grease a muffin tin or baking sheet.
  2. Whisk flour, baking powder, salt, and pepper in a bowl.
  3. Stir in cheddar, ham, spinach, bell pepper, and green onions until coated.
  4. Mix in Greek yogurt and beaten eggs to form a thick, sticky biscuit dough.
  5. Scoop 12 equal mounds into the muffin tin or onto the sheet.
  6. Bake 22–25 minutes until puffed, golden, and set in the center.
  7. Cool slightly before serving or freeze for meal prep.

Notes

  • For a spicier version, add diced jalapeños.
