Description

A French-bistro–style pasta with sweet leeks, savory mushrooms, and silky melted Gruyère.


Ingredients

  • Leeks, thinly sliced
  • Cremini or button mushrooms, sliced
  • Gruyère cheese, grated
  • Long pasta (linguine or spaghetti)
  • Butter
  • Olive oil
  • Garlic
  • Heavy cream
  • Dry white wine (optional)
  • Fresh thyme
  • Salt
  • Black pepper
  • Parmesan (optional finish)
  • Fresh parsley

Instructions

  1. Cook pasta in well-salted water until al dente; reserve ½ cup pasta water.
  2. Melt butter with olive oil in a wide skillet and slowly caramelize leeks until soft and golden.
  3. Add mushrooms and cook until browned and deeply savory.
  4. Stir in garlic and thyme; deglaze with white wine if using.
  5. Add cream and gently simmer until slightly thickened.
  6. Reduce heat and melt in Gruyère until smooth and silky.
  7. Toss pasta with sauce, loosening with pasta water; finish with parsley and black pepper.

Notes

  • For a richer flavor, use a combination of cremini and button mushrooms.
  • Adjust the amount of garlic according to your taste.
  • Parmesan can be added for extra flavor at the end.
