A French-bistro–style pasta with sweet leeks, savory mushrooms, and silky melted Gruyère.
Ingredients
- Leeks, thinly sliced
- Cremini or button mushrooms, sliced
- Gruyère cheese, grated
- Long pasta (linguine or spaghetti)
- Butter
- Olive oil
- Garlic
- Heavy cream
- Dry white wine (optional)
- Fresh thyme
- Salt
- Black pepper
- Parmesan (optional finish)
- Fresh parsley
Instructions
- Cook pasta in well-salted water until al dente; reserve ½ cup pasta water.
- Melt butter with olive oil in a wide skillet and slowly caramelize leeks until soft and golden.
- Add mushrooms and cook until browned and deeply savory.
- Stir in garlic and thyme; deglaze with white wine if using.
- Add cream and gently simmer until slightly thickened.
- Reduce heat and melt in Gruyère until smooth and silky.
- Toss pasta with sauce, loosening with pasta water; finish with parsley and black pepper.
Notes
- For a richer flavor, use a combination of cremini and button mushrooms.
- Adjust the amount of garlic according to your taste.
- Parmesan can be added for extra flavor at the end.
