Description

Soft brown sugar cookies filled with gooey dates and topped with silky caramel cream.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 3/4 cups all-purpose flour
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

  • 1/4 tsp salt
  • 1/2 cup caramel sauce
  • 1/2 cup cream cheese (for frosting)
  • 1/2 cup powdered sugar
  • Flaky sea salt for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Soak chopped dates in hot water for 10 minutes, drain, then mash slightly.
  3. Cream butter and brown sugar until light and fluffy. Beat in egg and vanilla.
  4. In a separate bowl, mix flour, baking soda, baking powder, and salt. Gradually combine with wet mixture, then fold in dates.
  5. Scoop dough onto baking sheet and bake 10–12 minutes until golden and set. Cool completely.
  6. Beat cream cheese with powdered sugar until smooth. Pipe a swirl onto each cookie, drizzle generously with caramel sauce, and finish with flaky sea salt.
