Description

Crispy Cajun snapper and juicy shrimp nestled into ultra-creamy Southern grits with a bold, buttery finish.


Ingredients

  • 2 Red snapper fillets
  • 8 Large shrimp (peeled & deveined)
  • 1 cup Stone-ground grits
  • 2 tbsp Cajun seasoning
  • 2 cups Chicken broth or water
  • 1/2 cup Heavy cream
  • 2 tbsp Unsalted butter
  • 2 cloves Garlic (minced)
  • 1 tsp Paprika
  • 1/4 tsp Cayenne pepper
  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice
  • Fresh parsley or microgreens (for garnish)
  • Salt & black pepper (to taste)

Instructions

  1. Bring broth to a simmer, whisk in grits, and cook slowly until thick and creamy; finish with cream and butter.
  2. Season snapper and shrimp generously with Cajun seasoning, paprika, salt, and pepper.
  3. Heat oil in a skillet and sear snapper until deeply golden and crisp; remove and keep warm.
  4. In the same pan, sear shrimp quickly until pink and lightly charred.
  5. Add butter, garlic, and a pinch of cayenne to the pan, swirling into a quick Cajun butter sauce.
  6. Spoon creamy grits onto plates and top with snapper and shrimp.
  7. Finish with lemon juice, fresh herbs, and extra pan sauce.

Notes

  • Adjust the level of Cajun seasoning to taste.
  • For a spicier dish, increase the cayenne pepper.
  • Fresh herbs can be substituted with dried herbs if necessary.
