- 2 Red snapper fillets
- 8 Large shrimp (peeled & deveined)
- 1 cup Stone-ground grits
- 2 tbsp Cajun seasoning
- 2 cups Chicken broth or water
- 1/2 cup Heavy cream
- 2 tbsp Unsalted butter
- 2 cloves Garlic (minced)
- 1 tsp Paprika
- 1/4 tsp Cayenne pepper
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- Fresh parsley or microgreens (for garnish)
- Salt & black pepper (to taste)
Instructions
- Bring broth to a simmer, whisk in grits, and cook slowly until thick and creamy; finish with cream and butter.
- Season snapper and shrimp generously with Cajun seasoning, paprika, salt, and pepper.
- Heat oil in a skillet and sear snapper until deeply golden and crisp; remove and keep warm.
- In the same pan, sear shrimp quickly until pink and lightly charred.
- Add butter, garlic, and a pinch of cayenne to the pan, swirling into a quick Cajun butter sauce.
- Spoon creamy grits onto plates and top with snapper and shrimp.
- Finish with lemon juice, fresh herbs, and extra pan sauce.
Notes
- Adjust the level of Cajun seasoning to taste.
- For a spicier dish, increase the cayenne pepper.
- Fresh herbs can be substituted with dried herbs if necessary.
