Juicy, garlicky shrimp kissed by the grill and served with a bright, refreshing Mediterranean crunch.
Ingredients

- 1 lb Large raw shrimp, peeled & deveined
- 4 cloves Fresh garlic, minced
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 1 tsp Smoked paprika
- 1/2 tsp Red pepper flakes (optional)
- Salt & black pepper to taste
- 1/4 cup Fresh parsley or cilantro, chopped
- 1 cup Cherry tomatoes, halved
- 1 Cucumber, diced
- 1/2 Red onion, finely chopped
- 1/2 cup Kalamata olives, pitted
- 2 tbsp Extra olive oil (for salad)
Instructions
- Toss shrimp with olive oil, garlic, lemon juice, paprika, salt, and pepper.
- Thread shrimp onto skewers.
- Preheat grill to high heat and lightly oil grates.
- Grill shrimp 2–3 minutes per side until pink and lightly charred.
- Combine tomatoes, cucumber, onion, olives, and herbs for the salad.
- Drizzle salad with olive oil and lemon; season lightly.
- Serve shrimp hot over or alongside the Mediterranean salad.
Notes
- For extra flavor, marinate the shrimp for 30 minutes before grilling.
- Adjust the amount of red pepper flakes based on your spice preference.
- Feel free to add other vegetables to the salad, such as bell peppers or radishes.
