Description

Juicy, garlicky shrimp kissed by the grill and served with a bright, refreshing Mediterranean crunch.


Ingredients

Scale
  • 1 lb Large raw shrimp, peeled & deveined
  • 4 cloves Fresh garlic, minced
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Smoked paprika
  • 1/2 tsp Red pepper flakes (optional)
  • Salt & black pepper to taste
  • 1/4 cup Fresh parsley or cilantro, chopped
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1/2 Red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted
  • 2 tbsp Extra olive oil (for salad)

Instructions

  1. Toss shrimp with olive oil, garlic, lemon juice, paprika, salt, and pepper.
  2. Thread shrimp onto skewers.
  3. Preheat grill to high heat and lightly oil grates.
  4. Grill shrimp 2–3 minutes per side until pink and lightly charred.
  5. Combine tomatoes, cucumber, onion, olives, and herbs for the salad.
  6. Drizzle salad with olive oil and lemon; season lightly.
  7. Serve shrimp hot over or alongside the Mediterranean salad.

Notes

  • For extra flavor, marinate the shrimp for 30 minutes before grilling.
  • Adjust the amount of red pepper flakes based on your spice preference.
  • Feel free to add other vegetables to the salad, such as bell peppers or radishes.
