Ingredients

  • 1 lb Ground beef
  • 2 Yellow onions
  • 1/2 cup Mayonnaise
  • 4 cups Romaine or mixed greens
  • 2 tbsp Olive oil
  • 2 cloves Garlic (minced)
  • 1 tbsp Dijon mustard
  • 1 tbsp Apple cider vinegar or lemon juice
  • Salt to taste
  • Black pepper to taste
  • 1 tsp Smoked paprika
  • 1 cup Cherry tomatoes (sliced)
  • Pickles to taste
  • Roasted potatoes or fries
  • Optional shredded cheddar or Swiss cheese

Instructions

  1. Slowly cook sliced onions in olive oil with a pinch of salt until deeply caramelized; cool slightly.
  2. Blend caramelized onions with mayo, garlic, Dijon, and vinegar until smooth; season to taste.
  3. Season ground beef with salt, pepper, and paprika; form small patties.
  4. Sear patties in a hot skillet until browned and cooked to desired doneness.
  5. Prepare bowls with a base of crisp greens.
  6. Add burger patties, tomatoes, pickles, and roasted potatoes.
  7. Finish with a generous dollop of caramelized onion aioli and optional cheese.
