Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment.
- Cream butter and sugar; beat in eggs and vanilla.
- Mix flour, baking powder, and salt; combine into a soft dough.
- Scoop dough into rounds and bake 10–12 minutes until just set; cool completely.
- Prepare custard or pudding until thick and chilled.
- Sandwich custard between two cookies.
- Spoon warm chocolate ganache over tops; let set before serving.
