Tender, spicy blackened shrimp served over buttery egg noodles in a rich, creamy mushroom stroganoff sauce — a bold twist on a classic comfort dish.


Ingredients

  • Large shrimp (1 lb, peeled and deveined)
  • Egg noodles (12 oz)
  • Mushrooms (2 cups, sliced)
  • Sour cream (½ cup)
  • Butter (3 tbsp)
  • Olive oil (1 tbsp)
  • Garlic (3 cloves, minced)
  • Onion (½, diced)
  • Paprika (1 tsp)
  • Cajun or blackening seasoning (1 tbsp)
  • Chicken broth (1 cup)
  • Lemon wedges (for garnish)
  • Fresh parsley (for topping)

Instructions

  1. Boil egg noodles in salted water until tender; drain and set aside with a little butter.
  2. Toss shrimp with Cajun or blackening seasoning. Sear in a hot skillet with olive oil for 2–3 minutes per side until golden; remove and set aside.
  3. In the same pan, melt butter, sauté onion and garlic until fragrant, then add mushrooms and cook until browned.
  4. Pour in chicken broth and simmer for 5 minutes, scraping the bottom to deglaze the pan.
  5. Lower heat and stir in sour cream and paprika until smooth and creamy.
  6. Return shrimp to the skillet and stir gently to coat in the sauce.
  7. Spoon stroganoff over egg noodles, garnish with parsley and lemon wedges, and enjoy hot.
