Ingredients
- Large shrimp (1 lb, peeled and deveined)
- Egg noodles (12 oz)
- Mushrooms (2 cups, sliced)
- Sour cream (½ cup)
- Butter (3 tbsp)
- Olive oil (1 tbsp)
- Garlic (3 cloves, minced)
- Onion (½, diced)
- Paprika (1 tsp)
- Cajun or blackening seasoning (1 tbsp)
- Chicken broth (1 cup)
- Lemon wedges (for garnish)
- Fresh parsley (for topping)
Instructions
- Boil egg noodles in salted water until tender; drain and set aside with a little butter.
- Toss shrimp with Cajun or blackening seasoning. Sear in a hot skillet with olive oil for 2–3 minutes per side until golden; remove and set aside.
- In the same pan, melt butter, sauté onion and garlic until fragrant, then add mushrooms and cook until browned.
- Pour in chicken broth and simmer for 5 minutes, scraping the bottom to deglaze the pan.
- Lower heat and stir in sour cream and paprika until smooth and creamy.
- Return shrimp to the skillet and stir gently to coat in the sauce.
- Spoon stroganoff over egg noodles, garnish with parsley and lemon wedges, and enjoy hot.
Notes
- Adjust the level of Cajun seasoning to taste for spiciness.
- For a lighter version, substitute sour cream with Greek yogurt.
