Ingredients

- 2 lbs Beef chuck, cubed
- 1 can (14 oz) Coconut milk
- 2 tbsp Curry powder
- 2 Yellow onions, chopped
- 4 Garlic cloves, minced
- 1 inch Fresh ginger, grated
- 2 tbsp Oil (neutral or coconut)
- Salt & black pepper to taste
- Water or broth (as needed)
- Fresh cilantro, chopped (for garnish)
Instructions
- Season beef with salt and pepper; brown in oil until deeply caramelized.
- Add onions and cook until soft and golden.
- Stir in garlic, ginger, and curry powder; bloom until fragrant.
- Return beef to the pot and pour in coconut milk.
- Simmer gently, covered, until beef is very tender, about 60 minutes.
- Uncover and simmer briefly to thicken the sauce.
- Finish with fresh cilantro and adjust seasoning before serving.
Notes
- Serve with rice or naan for a complete meal.
- Adjust the spice level by adding more curry powder or chili.
- This dish can be made ahead and reheated for better flavor.
