- 2 Chicken breasts
- 1/2 cup BBQ sauce
- 2 Sweet potatoes
- 1 cup Brown rice
- 2 tbsp Olive oil
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 cup Corn kernels
- 1 Red onion (thinly sliced)
- 1 Avocado
- 2 cups Mixed greens or arugula
- Salt to taste
- Black pepper to taste
Instructions
- Preheat oven to 425°F and line a baking sheet.
- Cube sweet potatoes and toss with olive oil, smoked paprika, salt, and pepper.
- Roast sweet potatoes for 25–30 minutes, flipping once, until caramelized.
- Season chicken and grill or pan-sear until cooked through; rest, then slice.
- Toss warm chicken slices generously with BBQ sauce.
- Cook brown rice according to package instructions; fluff.
- Assemble bowls: rice base, sweet potatoes, BBQ chicken, corn, greens, red onion, and avocado.
Notes
- For extra flavor, marinate the chicken in BBQ sauce for a few hours before cooking.
