- Whole mushrooms (cremini or button)
- 4 cloves Garlic
- 1/4 cup Soy sauce or tamari
- 1/4 cup Balsamic vinegar
- 2 tablespoons Olive oil
- 1 tablespoon Maple syrup or brown sugar
- Black pepper to taste
- Fresh thyme or parsley for garnish
- Red pepper flakes (optional)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet.
- Clean mushrooms and trim stems if needed.
- Whisk together olive oil, soy sauce, balsamic vinegar, maple syrup, garlic, and pepper.
- Toss mushrooms thoroughly in the glaze.
- Spread mushrooms cut-side down on the baking sheet.
- Roast for 20–25 minutes, stirring once, until deeply browned and sticky.
- Finish with fresh herbs and serve hot.
Notes
- For a spicier kick, add red pepper flakes.
- These mushrooms can be served as a side dish or over rice/quinoa.
