Description

Ingredients

  • 1 lb Ground beef
  • 2 cups Enchilada sauce
  • 2 cups Shredded cheddar or Mexican cheese blend
  • 8 Flour or corn tortillas
  • 1/2 cup Diced onions (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a skillet, cook ground beef (and onions if using) until browned; drain excess fat.
  3. Stir in a few tablespoons of enchilada sauce to coat the beef mixture.
  4. Spoon beef into tortillas, roll tightly, and place seam-side down in the baking dish.
  5. Pour remaining enchilada sauce evenly over the top and cover with cheese.
  6. Bake for 20–25 minutes until hot and bubbly with golden edges.
  7. Garnish with fresh cilantro or sour cream if desired, and serve warm.
