- 2 cups Enchilada sauce
- 2 cups Shredded cheddar or Mexican cheese blend
- 8 Flour or corn tortillas
- 1/2 cup Diced onions (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- In a skillet, cook ground beef (and onions if using) until browned; drain excess fat.
- Stir in a few tablespoons of enchilada sauce to coat the beef mixture.
- Spoon beef into tortillas, roll tightly, and place seam-side down in the baking dish.
- Pour remaining enchilada sauce evenly over the top and cover with cheese.
- Bake for 20–25 minutes until hot and bubbly with golden edges.
- Garnish with fresh cilantro or sour cream if desired, and serve warm.
